Hey lovelies! I thought I share another recipe with you. I know it's another dinner salad. But I just like light meals like this for the summer. I promise it's quite filling though, I even got hubby hooked into my summer salads.

Here's my Shrimp and Black Bean Salad:

In a large bowl, mix 6tbs of olive oil, lime peel and some dry oregano. Then add two cans of black beans, 3 chopped green onions, shredded escarole and 1/2 cup of chopped fresh cilantro. Toss everything together. Heat oil in a large skillet and lightly fry a head of chopped anise, when slightly crisp, add the shrimps, turning once until opaque. Season with salt and pepper and add on top of the salad.
